It's Thriving Thursday!

In all the things that you do today, thrive. Sometimes the best we can do is survive, but today I'm going to remind you to thrive. Survival in an instinct. Thriving is a mindset.


One of the ways that I have been thriving is by testing out my Epicure products. Raw to ready in 20 minutes or less? Yep. Really. Last night it was Tilapia coated in Southern Baked gluten-free crumb mix, cooked on the 1/2 sheet pan lined with the bake and roll. (OK, so I drizzled a little butter on top for good measure.

Here's what things looked like once it made it to the table:

It was so good. Really. Took about 20 minutes at 375, and it was good, moist and (mostly) guilt-free. I did put some olive oil on the bake and roll, but honestly, I didn't need to. Nothing sticks to that. I paired it with brown Basmati rice with Montreal Chicken seasoning blend (it's my go to savory spice blend for almost anything) and the garlic and herb sea salt grinder, and carrots steamed in the Multipurpose steamer with a little butter, brown sugar and Apple Pie spice. Everyone loved it.


Speaking of the Apple Pie spice -- it is a host exclusive gift this fall. I use it almost daily when I make oatmeal in the rectangular steamer. 1/2 c of oats, 1 c water, 1 T maple syrup and a sprinkle of Apple Pie spice in the microwave for 3:30 min at 50% power (in my microwave). This is my go to breakfast.

And I particularly love it sitting on my deck when the air in South Carolina is cool and I'm drinking my coffee in my favorite mug. That was this morning. Thriving.


I'll save a few more things I've tried for Tasty Tuesday, but let me know what you think. I work hard at eating well because I need to feel my best in order to do the work before me. I need to be truly embodied to lead and love and sit with those whom God has brought into my path.
